When I first saw the name of this restaurant I was really curious to know the meaning behind it – Origin Dining – what kind of experience is it provoking? After all, this is an era of virtual reality. People are more interested in the imaginal world than real life experience. Weyman Leung, owner of Origin Dining, said he wants to get back to basics. “I have cooked everywhere. Now all I want is to go back to what I know the best – the original flavour of food.” And this is all he is offering.

Weyman has been cooking for 16 years and he did cook everywhere. Starting his apprenticeship in a small local restaurant in Lane Cove, he later got awarded the Good Food Guide’s Joesphine Pignolet Young Chef of the Year Award in 2002. After that he headed to London to work with David Thompson at Nahm restaurant, he then came back to Sydney to work as the head chef in a few corporate in-house dinning teams. But what he wanted the most after all these years, is a small restaurant that serves the local community, with simple food that people would love to come back to again and again.

This is the reason why Weyman chose Schibello Coffee. Weyman recalled his first taste of Schibello coffee, and it was still the same as what he had experienced today. ‘It is this consistency and quality that I am looking for: the smooth mouth feel, nice aroma and clean taste. No matter who does the coffee, it still tastes the same. This is what I want. And this is what the customers want. Every customer who orders the coffee say it is fantastic and would come back for another one. This is exactly what I want to offer.’
