This month for "Shop of the Month" we interviewed Manduka from Nikos Restaurant Bar in Bondi.
                                   
                                          

  1. What do you think people look for in a good cup of coffee?

 I believe people look for not only great taste, but they want to also find their daily fix of caffeine in a good cup of coffee. I have found that customers love a sweet, yet strong cup of coffee. To compliment a great coffee experience, I truly believe that the barista must play a major role. A good barista needs to be able to cater to the needs of each customer and to know each customer on a personal level. This makes the customer feel appreciated and creates a much more amiable experience every time.

 

  1. Why do you think that Schibello Caffe’s coffee can satisfy to the needs of customers?

 I would say that Schibello Caffe’s strong points are the great taste, the consistent blend, the great support and also the great crema that makes it sublime.

 

  1. Did you notice any changes after moving to our brand?

 I did, for instance we gained more takeaway coffees. I have to say that I’ve noticed positive feedback not only in terms of quality of coffee, which is actually more consistent now, but also in terms of comfort. In fact I’ve found a new majesty with outdoor barriers.

 

  1. Which is the busiest moment of the day for coffee?

Sunday mornings. In summer especially, when the good weather and the beautiful beach attract tourists, families and young people. The Bondi area becomes crowded and of course I’m busier with customers.

 

  1. Can you recognize Italian customers from their coffee request?

 Yes. It’s pretty clear, because they always have to have an espresso in a ceramic cup. It’s almost an insult if you put it in a takeaway cup for them!

 

  1. How many coffees do you drink during the day when you’re not too busy with customers?

 I try to have two per day, usually two double ristrettos.

 

  1. Which type of coffee is most popular?

 I’d have to say a Cappuccino. This is due to the lack of information and education that tourists have about coffee.

 

  1. What is the strangest coffee request you have had?

 I remember a couple of really strange requests actually. For example; one customer asked me for a coffee with half skim and half soy milk.

Another time it was even worse, when a foreign woman wanted a hot chocolate without milk and without chocolate! I thought that was very strange! I’ve also had, “not too strong, not too weak!” and another being a strong decaf coffee… All being a little weird!!

 

  1. Have your coffee sales increased or decreased since the change?

 We have noticed an increase of 1kg per week, which is a great indication that we made the right choice with the change of coffee companies.

 

  1. Do you find that you sell more coffees as a takeaway or as sit down?

 I do sell more coffees as sit down, because people normally like to drink a coffee during or after meals.
